Today, my awesome friend Tasha (who also eats GF) needed to get rid of some bananas....so I made GF strawberry-bananas muffins to share with her. They turned out yummy!
Gluten Free Strawberry-Banana Muffins

Ingredients:
2 eggs
1 pouch gogo sqeez apple strawberry sauce
1//3 cup butter
¾ cup brown sugar
1 tsp GF vanilla
3 mashed bananas
2 cups all purpose GF flour
1 tsp GF baking powder
1 tbs ground cinnamon
1 cup sliced strawberries
Optional streusel topping (didn’t turn out how I wanted though)
½ cup all purpose GF flour
1/3 cup brown sugar
½ teaspoon cinnamon
¼ teaspoon xanthan gum (I didn’t have this….maybe it would be better?)
3 tablespoons butter
1) Preheat oven to 375. Line baking cups.
2) Combine eggs, gogo squeez, butter, brown sugar, vanilla and bananas.
3) Combine GF flour, baking powder, cinnamon in a separate bowl.
4) Add dry ingredients to wet ingredients.
5) Fold in strawberries.
5) Top with streusel if you choose.
6) Bake for 20 min
Tried this recipe for gluten free cran-lemon muffins. I had to sub some ingrediants (including EVOO for butter, which may be part of the problem) ....they ended up not being sweet enough and a little over-done. It seems to be MUCH easier to over-bake GF treats. I cooked them for the least amount of time suggested so I am going to have to check on them more often.
